How would i check to see who is currently ( or what computer) connected to the shared device.  Also could i disconnect them from the server's interface so that another user can use it?

You will see in USB-NET window which computer is connected to shared USB device. In any time you can stop sharing of this USB device forcedly and then share it again to allow other user to connect to this USB device.
